THE IDEAYOUR TASTE,
LESS WORK.
In the kitchens he advised, Marco often saw the same choice: make supplì from scratch, spending time on every step, or buy them ready-made and accept a result he was never happy with.
That sparked the idea: a supplì made with the care you would give it yourself, ready to fry. Less preparation in the kitchen, and a product you can be proud to serve.
THE TESTINGGREAT TO EAT,
READY TO SERVE.
In professional kitchens, Marco often encountered a problem: after thawing, the breadcrumbs would fall away and the supplì could split during frying. Frying them from frozen, however, made it harder to achieve a hot, melting centre.
The challenge was to develop a batter that kept the breadcrumbs in place after thawing, so the supplì would stay intact, crisp outside and soft inside. Many trials came before the first sale. Marco still tastes production batches and refines the recipes today.
